Hi all you great home bakers! I am sorry!  I have been so busy that I haven’t been able to post here as often as I would like. I have been making new videos, coming up with new formulas and having a lot of fun. I have also been writing a book, no two books and trying to publish two courses on Udemy.

 

One of the courses is, “Learn the Old World Craft of Sourdough Baking.” I will be posting coupons to it when it finally gets published, which will take some time still.

The Yogurt one was fun, it isn’t sourdough, but it is fermented food and I used the leftover whey to make the Ciabatta series which is not yet finished.

I did more experimenting on the yogurt and found I could start a batch in the morning, let it incubate at a lower temperature (100F instead of 110F) for only eight hours, strain it for only one hour and I had some really nice creamy yogurt and more of it. I like it a bit thicker so I will let mine strain a bit longer next time.

Hack Alert!
A fun yogurt hack is to froth the hot milk when you are done with the initial heating to prevent a skin from forming. And if you forget and the skin forms, make sure to get it all out as it will cause small hard pieces to make their way into your nice creamy yogurt. Don’t ask me how I know that little fact 😉
